Irish Moss

What Gelatin is to "Jell-O", Raw Irish Moss is to Pudding, Cream Pie, Meringue, Whipped Cream, Salad Dressing, Smoothies, Sauces, anything you could want a stable-liquid form for! While gelatin is an animal-derived protein, Irish Moss contains a polysaccharide (a natural form of sugar) which, when thoroughly blended, also disperses throughout a liquid to create a semi-solid structure. In fact, the carageenan found in Irish Moss is used by the mainstream food industry to make jellies, ice creams, dressings and other foods!

Chaga Mushroom

Chaga is traditionally grated into a fine powder and used to brew a beverage resembling coffee or tea. For medicinal use, an extraction process is needed to make at least some of the bio-active components bioavailable. These bio-actives are found in the mostly indigestible chitin cell walls of the chaga. Humans lack the enzyme chitinase, so cannot fully digest raw mushrooms or their derivatives, and the digestive process works too fast for the stomach acid to take effect. Scientific studies and research are in general also based on highly concentrated extracts, and traditional Russian usage is also based on a form of hot-water extraction (by preparing zavarka).

Tomatoes Sun-Dried

Sun-dried tomatoes are ripe tomatoes that lose most of their water content after spending a majority of their drying time in the sun. Typically, tomatoes spend 4–10 days in the sun in order for the sun-drying process to be complete. Cherry types of tomatoes will lose 88 % of their initial (fresh) weight, while larger tomatoes can lose up to 93% during the process. As a result, it takes anywhere from 8 to 14 kilos of fresh tomatoes to make a single kilo of sun-dried tomatoes.

After the procedure, the tomato fruits will keep their nutritional value. The tomatoes are high in lycopene, antioxidants, and vitamin C. Sun-dried tomatoes can be used in a wide variety of recipes and come in a variety of shapes, colors, and tomatoes. Traditionally, they were made from dried red plum tomatoes, but they can be purchased in yellow varieties. Sun-dried tomatoes are also available in the form of pastes or purées.

Sun-dried tomatoes may also be preserved in olive oil, along with other ingredients such as rosemary, basil, dried paprika, and garlic.

Figs are a good source of potassium, a mineral that helps to control blood pressure. Since many people not only do not eat enough fruits and vegetables, but do consume high amounts of sodium as salt is frequently added to processed foods, they may be deficient in potassium. Low intake of potassium-rich foods, especially when coupled with a high intake of sodium, can lead to hypertension. In the Dietary Approaches to Stop Hypertension (DASH) study, one group ate servings of fruits and vegetables in place of snacks and sweets, and also ate low-fat dairy food. This diet delivered more potassium, magnesium and calcium. Another group ate a "usual" diet low in fruits and vegetables with a fat content like that found in the average American Diet. After eight weeks, the group that ate the enhanced diet lowered their blood pressure by an average of 5.5 points (systolic) over 3.0 points (diastolic).
